Crystal Palace star Olise scored in the 56th minute, with France having won both of their games so far.
Olise came close to scoring with another effort. However, the prospect then had to be substituted due to an injury.
France introduced some talented players as the game wore on, with the likes of Rayan Cherki, Amine Gouiri, Elye Wahi, Bradley Barcola and Manu Kone entering the fray.
Norway came close to equalising in the closing stages with goalkeeper Kristoffer Klaesson up for a corner but France's Castello Lukeba managed to clear the ball away.
A draw against Switzerland on Wednesday would guarantee first place in the group for France.
